Rhubarb loaf or muffins
2 1/2 cups All Purpose Flour1 tsp. Baking soda
1/2 tsp. salt
1 1/4 cup packed brown sugar
1/2 cup veg. oil
1 egg
1 cup buttermilk
1 tsp vanilla
2 cups chopped rhubarb.
Toping:
1/2 c. packed brown sugar
1/2 tsp. cinnamon
1 tbsp butter melted
(I put this all in the microwave for a few seconds till butter is melted)
Bake 35o F
20/25 min. muffins
Loaf 50/60 min.
Cool. Freezes well.
I posted this to the last board but here it is again for anyone having access to late spring rhubarb...and having just put two loaves into the oven, I realize that I've left out the oil in this batch. Hmmm....old age catching up??!!
Fran, what a long drive to see your kids but truly, I've seen more parents move to be near their kids in their older age, only to find the kids are too busy with their families or they've moved to some other place to live. I would rather be in a place I chose, stay in touch by phone, email, visit but then, go back to where I know people, a place that I'm familiar with...never end a sentence with a preposition/proposition (lol)....right!!

It's Phyllis the lurker again asking if you have ever substituted applesauce for oil? I do this all the time for "baked from scratch" recipes of cake or breads. A nutritionist gave me this idea but said not to use the applesauce if what you are baking is short on flavor.

Rosey, I agree with not moving. DS#1 lived in Tasmania with his first wife for 7 years and was VERY keen on us moving over there. Lucky we didn't!
